Weekly Bake Off: Simnel Cake

Happy Easter everyone!

I hope you are enjoying the Easter weekend and have received a suitable amount of chocolate today!
This simnel cake is the last of my Easter bakes...after simnel muffins, hot cross buns, Easter biscuits and egg box mini cupcakes! Along with hot cross buns, I've never made simnel cake before so this was a good challenge. The cake itself was lovely and moist and looked rather pretty! There was also a layer of marzipan baked into the cake as you can see below.
This is also my entry into the Weekly Bake-Off where a different Mary Berry recipe is set each week which budding bakers make and submit for judging.   8. It is quite like a Christmas pudding/Christmas cake! The 11 balls of marzipan on the top are supposed to represent 11 of the apostles! It's a very traditional Easter cake! :-)

  12. This looks very pretty, great photos too! I'm not a marzipan fan but I'm in love with that polka dot ribbon, it finishes it off perfectly!

  13. Love the ribbon on this cake. Nice touch. Simnel cake has so many interesting flavors with the marzipan, dried fruit and citrus. One of my favorite lattes is a marzipan latte from breakfast cafe in Salt Lake. Yum!

  16. I have seen recipes on this before, however, your presentation here really is a stand out. Love the ribbon as well as the marzipan on top. I will need to try making one of these soon! Great post.

  20. Oh that looks so pretty. Love the bow tied so nicely around the cake - it sets it off really well. I adore simnel cake, something to do with the squidgy layer of marzipan in the middle. Luckily, there is still plenty of ours left.

  22. Thanks everyone! It seems the ribbon is the star of the show!! The simnel tasted really good too...for everyone that said they've never made one...definitely give it a go next year! :-)
